Quickie Yellow Curry [v/gf]

So I've learned to search for and create recipes that fill me up with warm goodness, without killing the caloric bank. Andplusalso, my all-time favorite curry place just closed, and I used to eat there at LEAST once a week (usually when I was lazy post-hiking day). I'm still not done mourning this loss.

In the meantime, it means creating yummy recipes that will fill you at the end of chilly days with great recovery goodness.

Quickie Yellow Curry [v/gf]


  • 1 onion, chopped to desired size (I like big pieces)

  • 4 cloves garlic, minced (or 1T garlic powder)

  • 1T fresh grated ginger (or 1tsp ground)

  • 1T coconut oil

  • ½- 1c diced carrots

  • 2 cups potatoes, chopped and half cooked

  • 1 cup snow peas, whole or loosely cut

  • 1 block firm tofu, pressure, cut into 1inch cubes

  • 1 ½ T curry powder

  • 1T turmeric

  • 1-2 tsp dried cilantro (or a few sprigs of fresh)

  • ½ tsp cayenne

  • 1 14-ounce can coconut milk (light will make it runny)

  • 1 cup vegetable broth

  • Sea salt and black pepper to taste

  • Jasmine rice, rice of choice, quinoa, etc.


Heat a large saucepan or pot to medium heat and add 1T coconut oil. Add the onion, garlic, ginger, and let cook 2-3 minutes. Add carrots and a pinch each salt and pepper and stir frequently until softened – about 5 minutes.

Add curry powder, turmeric, cilantro, cayenne (or chili pepper), veggie stock, coconut milk, and stir. Bring to a simmer then reduce heat slightly and continue cooking for 10-15 minutes.

Add the snow peas, potatoes, and tofu and let simmer 5 more minutes before serving (to keep them from overcooking).

Taste and adjust seasonings as needed. I added another pinch or two of salt.

Serve over grain or seed of choice. I went with Trader Joe’s Jasmine Rice because it was easy to pop in the microwave!
