Yup, these aren't great for you, but hey! They are better than the standard corn dog, right? Higher protein, better ingredients...?
I'm trying to make us feel better about these, but realistically we are making them for a party, right?
Parties like finger foods like these, and people love to hear that they are a slightly more healthful alternative to the non-veg version.
Corn Dog Bites [v]
OR, for a quicker fix, use
Heat oil in a deep pot or fryer to 350 degrees.
While oil is heating, prepare hot dogs and batter.
Slice each hot dog into 4 equal pieces (for a total of 32 pieces) and set aside OR half them, if you are choosing skewering/ lollipopping (bonus points for you if you got the Parks and Rec reference).
In a large mixing bowl, prepare cornbread mix, whichever you choose. It will be thick.
Drop and roll the bites into your batter until fully and thickly coated. Using a fork or spoon, carefully drop each battered corn dog bite in the oil. The skewers can be a tad tricky here as you may have to hold them and roll them individually.
Fry until golden brown. Using a slotted spoon remove corn dogs from the oil and place on a stack of paper towels to drain excess oil. Repeat with remaining hot dogs.
I like offering them up with a mix of condiments, but know your audience!
