Protein Pumpkin Waffles [v]
Have you noticed how not-so-healthful breakfast foods are?
Yeah. Not great. So coming into the holiday season, let's work to be more mindful of breakfast choices!
Don't give up the waffles. Transform them into a great protein boost for the morning!
These protein pumpkin waffles will energize you without leaving you with a sugar crash, and you can even removed the brown sugar if you wish!
Let's rock this season of eating, starting with breakfast waffles.
Protein Pumpkin Waffles
3/4 c all-purpose flour of GF blend
¼ c protein powder of choice
2 tsp baking powder
1/2 tsp cinnamon
1 tsp pumpkin pie spice
1/8 tsp salt
1 c nondairy milk (I love vanilla unsweetened)
1/2 c pumpkin puree
1/4 c brown or coconut sugar
1 T maple syrup
1 flax egg (1T flaxseed meal + 3T water)
1 T melted coconut oil (optional, but can help with it coming off the iron more easily)
Spray coconut oil (or other cooking spray)
Preheat waffle iron.
In a small bowl, mix flax egg to let set.
Whisk together flour, baking powder, cinnamon, pumpkin pie spice, and salt in a medium bowl. Make a well in center of mixture. In a medium bowl stir together nondairy milk, pumpkin purée, brown sugar, melted coconut oil, and flax egg.
Pour into well in flour mixture and stir to combine.
Spray waffle iron with coconut oil or cooking spray. Spoon about 1/4 cup batter per waffle onto iron and spread batter out to edges. Cook according to waffle iron directions, repeating until all batter is used.
