Balsamic Maple Carrots [v/gf]

It's easy to overthink vegetable recipes and end up with a mushy mess. Balsamic maple carrots are an instant crowd pleaser with little effort required!

 

I have, on occasion, rushed to get this made, so I have just drizzled the liquids over the carrots instead of mixing. It’s a difficult recipe to mess up, so go for it!

 

Make this a staple side dish to your next family dinner to ease the kitchen work without easing the quality on the table.

 

Balsamic Maple Carrots

 

Ingredients

  • 2 lbs carrots, washed & trimmed, left whole or sliced in half

  • ½ c balsamic vinegar

  • ¼ c Extra virgin olive oil

  • ¼  c real maple syrup

  • 1T dried rosemary

  • salt and pepper to taste

 

Instructions

 

Preheat oven to 400 F.

 

Line baking sheet with parchment or foil.

 

Wash, trim, and spread carrots out on a baking sheet evenly.

 

In a small bowl mix oil, vinegar, and syrup.

 

Brush mixture over carrots evenly, then sprinkle the rosemary, salt, and pepper.

 

Bake for 20 minutes, or until tender.
