Blueberry Popsicles [v/gf]

Mint and blueberries in season at the same time? Sounds like we need to test out that combo! End of summer and rolling into fall, I'm holding on to a little sunshine with these pops!

Blueberry mojitos are a favorite of mine, but these are a close second (and a bit more kid friendly).

Keep it light, simple, and flavorful this summer with a delicious blueberry popsicle, optional mint, that is healthful enough to be a breakfast item for those last few warm mornings!

Blueberry [Mint] Popsicles


  • 3c fresh or frozen blueberries

  • 2c plain or vanilla non-dairy yogurt

  • 1/2 c fresh mint leaves, loosely packed (optional)

  • 1/4 c maple syrup, or more to taste

  • 1 tsp vanilla extract (optional)

  • popsicle molds (makes about 12)


Wash blueberries and mint if store bought.

Toss the berries, mint, yogurt, maple syrup and vanilla in the blender or a bowl if you're using an immersion blender.

Blend until smooth.

Check flavor and add water or more maple syrup to desired consistency and sweetness.

Fill popsicle molds and toss in the freezer for 4-6 hours.

Kick it with your popsicle, a good book, and a side of vitamin D!
