Peanut Butter Muffins [v]

Why are PB muffins not a more normal thing? Who needs berry muffins when peanut butter can be put in them?

I'll tell you why. Peanut butter is NOT easy to bake with.

So these peanut butter muffins took a little trial and error before they were ready for your kitchen!

 

Peanut Butter Muffins Recipe

 

Ingredients

  • 1 flax egg (1T flax meal+ 3T water, set)

  • 1/3  C peanut butter (for lower calorie, used PB powder)

  • ½ C nondairy milk

  • ½ tsp vanilla extract

  • ½ cup sugar

  • 1 tsp baking powder

  • ¾ c flour or flour blend (optional: substitute 1/4c protein powder)

  • ¼ tsp salt

  • 1 tsp cinnamon (optional)

Instructions

 

Preheat oven to 350 degrees.

Line a muffin/cupcake tray with liners of choice.

 

Mix first 4 ingredients (wet).

In a separate bowl, add all dry ingredients together until smooth.

Combine dry mixture to the wet mixture and stir until combined. It's not a thick mixture, so don't be alarmed!

 

Fill each muffin tin 1/2 – 2/3  full.

 

Bake for 20-30 minutes; until golden. When you insert a toothpick, if it comes out clean, they’re ready!
