I don't think I've ever been more pleased with a tofu "egg" flavored recipe.
The vegan sausage can make a huge difference in flavor, so I strongly suggest Lightlife. If you're anti-faux meats, I get it, but sometimes we make the exception for brunch.
What's great about the Gimme Lean Sausage is if you were to eat the entire thing, it would be 420 calories about 50 grams of protein, plus fiber and a ton of potassium for runners out there.
Beat that, animal cruelty and environmental destruction. You've got nada on this stuff!
Quick Tofu Breakfast Sandwich
4 English muffins
Vegan sausage of choice (I highly recommend Lightlife Gimme Lean Sausage)
4 slices vegan cheese of choice
1 block tofu, pressed, sliced into 4 thinner blocked pieces.
Oil for stove top cooking
Sauce for Tofu
2T extra virgin olive oil
½ tsp turmeric
½ tsp paprika
1T lemon juice
Hot sauce to taste
Salt and pepper to taste
Using a biscuit cutter that’s the same size as your English muffin (or a fine hand with a knife) cut each tofu block so that you have 4 circles.
Place in shallow pan.
Mix sauce for tofu, and pour over tofu.
Let sit, flipping after a few minutes to soak both sides.
Using the same biscuit cutter, break sausages into 4 equal amounts and press each quarter into the cutter, forming your sausage patty.
If you are using Lightlife Gimme Lean, expect it to be sticky, but delicious.
Heat pan or pans over medium heat with 1-2 tablespoons of oil. If you are using one pan, I suggest cooking the patties first, about 8 minutes per side.
You can use the same oil for the tofu.
Pan cook tofu about 10 minutes per side, cookies until goldening starts (I pour the rest of the left-over marinade on my tofu once they are in the pan)
Build your breakfast sandwich, and enjoy!
