Gooey Snickerdoodles [v]

Snickerdoodles might be my all-time favorite cookie recipe. They are so sugary and gooey! Terrible for you, but sometimes we have earned a treat, right? That's what I'm telling myself anyway.

You'll get about 3 dozen cookies out of this recipe, but they won't last long so that's a good thing!

 

 

Gooey Snickerdoodles

Ingredients

  • 1 flax egg (1T flax meal + 3T water)

  • 1 c buttery spread

  • 1 c white sugar

  • 1 c brown sugar

  • 1T vanilla extract

  • 2 1/4 c flour(s) of choice

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

Coating

  • 1/4 cup white sugar

  • 1 tbsp cinnamon

Instructions

 

Preheat oven to 350ªF (180ºC)

In a small bowl, combine flax meal and  water to create the flax egg. Let sit for about 5 minutes, but it can sit however much longer you need, as you cream the butter and sugars together in a large bowl.

 

Add flax egg and vanilla extract and beat until combined.

 

In separate bowl, mix flour, baking powder, baking soda, and salt. slowly pour in flour mix to wet ingredients.

 

In another shallow bowl or plate, stir together white sugar and cinnamon to make cinnamon sugar coating.

 

Roll dough into 1-inch balls and roll in cinnamon sugar. Place on a greased cookie sheet, or Silpat, and bake for 14 minutes.

 

They will sink into themselves a bit as they cool. Let them cook for 2-4 minutes before moving them to a container or wire rack, and they still need to set a tad more.

 

Try not to eat them all. Good luck.
