Quinoa "Fried Rice" [v/gf]
No, quinoa is not rice. It's not even a grain.
No, there is no rice in this recipe; but the flavor may fool you!

What's so great about quinoa?
-It's a complete protein, for those that complain about vegan protein.
-It has more phytonutrients than most berries, an anti-inflammatory
-Contains the heart-healthy monounsaturated fat and high fiber for satiation.
-High in iron, manganese, magnesium, quinoa is great for athletic recovery, especially women.

This recipe is a guilty pleasure without the guilt! Sometimes comfort food is what we need, but if we can adjust it so it's better for the bod without depriving the taste buds, that sounds like a win!
I also love that this can be made in a huge batch for meal prep/planning purposes.
It goes great as a side to a main dish or can stand alone. We need more versatility in our lives.
Quinoa "Fried Rice"
Ingredients
1c quinoa
½ c corn kernels
½ c peas
1-2 carrots, peeled and diced
½ small white or yellow onion, diced
2 cloves garlic, minced
½ c green onions, sliced
¼ c Tamari, Braggs Liquid Aminos, soy sauce
Optional: ½ tsp sesame/toasted sesame oil
Directions
Cook quinoa according to package.
Heat 1T oil and sesame oil in pan, sautee onion and garlic until onion is translucent.
Add corn, peas, carrots for a few minutes.
Fold in cooked quinoa. Garnish with green onion.
