Oatmeal Choco-Chip Cookies [v]

Why must people ruin oatmeal cookies with raisins? Honestly, I prefer my cookies without the chocolate; but admitting that would make me unpopular so *redacted* and moving on. These are soft, chewy, and the touch of cinnamon adds a little magic to the oatmeal!

 

 

Cinnamon is an anti-inflammatory so let's pretend these are healthful.

You've earned a treat; so let's make some oatmeal chocolate chip magic.

 

Oatmeal Choco-Chip Cookies

 

Ingredients

Dry

  • 1 1/4 c flour (sub 1/4c with protein powder)

  • 1 cup rolled oats

  • 1-2 tsp cinnamon

  • 3/4 teaspoon baking soda

  • 1/4 teaspoon salt

 

Wet

  • 3/4 c vegan buttery spread, cold (I use Earth Balance)

  • 1/2 c coconut sugar (make sure your white sugar is vegan, if you use white)

  • 1/2 c brown sugar (I prefer dark)

  • 1T vanilla extract

  • 1/2 c vegan chocolate chips 

 

Directions

 

Preheat oven to 350ᵒF (180C).

Lightly grease a baking pan, or use a Silpat.

In a large bowl, whisk together all the dry ingredients.

 

In a medium bowl, add all the wet ingredients, creaming the vegan butter and sugars together.

 

Combine wet ingredients into the dry, and mix.

 

Roll spoonfuls of cookie dough into balls and place on the prepared baking sheet. Bake 15 minutes, even if they look underdone, remove and let sit for a minute before transferring. They will be cooked.

Promise.

 

These are notorious for tricking me into thinking they need more time, when they don't. Don't make oatmeal bricks. 15 minutes and remove.
