I am obsessed with this PB cookie recipe. It's amazing, doesn't require the oven (which is great in the summer time!) and is way less guilty than most cookie counterpart recipes.

This is one to keep in your recipe book, especially if you like finding ways to incorporate your protein powders. I recommend unflavored or vanilla for this recipe, but chocolate could be fun for you choco-lovers out there.
Peanut Butter Protein Cookies
2 cups cereal of choice (processed to "flour") I love Panda Puffs
½ cup unflavored protein powder ( I use NCN Brown Rice Protein Powder)
½ cup of brown sugar
½ cup of maple syrup
¾ cup of nut butter (mixed PB2 is great!)
1 tsp of vanilla extract
Mix together the sugar, syrup, nut butter and vanilla.
Stir in the cereal and protein powder.
Roll 1 tablespoon's worth into balls, and place on parchment paper.
Press down to flatten, as desired.
Refrigerate for 2 hours before serving/eating.
I love making double batches, and keeping them in the freezer for cookie craving moments!
