Protein Banana Bread

There are a million banana bread recipes out there, I realise this.

Stick with what you know, but know that mine has incredible taste for an easy recipe with clean ingredients and protein powder.

Boom.

Did I woo you yet?

 

How about that mine doesn't call for the devil ingredient (nuts)? Or if you like nuts, how about that you can of COURSE add the most delicious ingredient ever?

I don't know why but the world is truly split on the with/without nuts debate. So much drama over a little addition... Moving on.

 

 

Banana Bread

Ingredients:

  • 4 over ripe bananas ( 1 1/3 cups)

  • 2T ground flax seed

  • 1/3 cup nondairy milk (I used cashew)

  • 1/3 cup oil (I used melted coconut)

  • 3T maple syrup

  • 1tsp vanilla extract

Dry:

  • 1 ¼ cups flour/flourless blend

  • ¼ cup protein powder (I use North Coast Naturals Brown Rice)

  • ½ cup rolled oats

  • ¼ cup sugar (I used coconut sugar)

  • 1tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

 

 

Directions:

Preheat oven to 350°F, grease dish (9x4x4).

 

In a large bowl, mix the first set of ingredients, preferably with a hand mixer or immersion blender until smooth with few lumps.

 

In a separate bowl, mix the dry ingredients.

 

Gradually stir dry ingredients into the wet mixture.

Fold in chopped nuts if it pleases you.

 

Mixture will seem a bit sticky, so it will not pour into the baking dish. Scoop or scrape mix into greased dish.

 

Bake for approximately 55 minutes, until toothpick stuck in the center comes out clean.

Let sit for 10 minutes before removing from dish, if you so choose.
