Apple Pie Pockets

Can we pretend it's summer?

Because fall isn't being kind to my hiking needs.

Lately it seems that I find a trail in sunshine, and it quickly turns to rain or snow downpour! Fun in theory, but not great for photos. Le sigh.

I shall eat my woes away with delicious bakes goods.

Let's do this!

My go-to Pie Dough:

  • 1 ¾ cup all-purpose flour

  • 2 tsp granulated sugar

  • ¾ tsp table salt

  • 6 T cold Earth Balance

  • ¼ cup solidified coconut oil

  • 8 T ice cold water


Mix flour, sugar, salt in a bowl. Add Earth Balance in pieces and toss to coat. Pinch buttery pieces in the flour mixture until it becomes more mixed and can be clumped together when squeezed in your hand.

Add coconut oil, toss to coat, and begin similar process as with the Earth Balance. This shouldn’t take longer than a minute or so. Drizzle half the ice water in the mixture and rake through the mixture, then add the rest, 1 tablespoon at a time, until dough has started coming together, but isn’t WET.

Roll into a ball and place in between two pieces of plastic wrap (or a Ziploc bag with air suctioned out) and place in the refrigerator for about 30 minutes. Cold dough is easier to roll out!

Apple Filling:

  • 2 apples (I used Granny Smith)

  • 1 tsp Earth Balance

  • 1T sugar/ 1T brown sugar (or 2T of just one type)

  • ½ tsp cinnamon

  • ½ tsp lemon juice (optional)


Slice apples to ¼ - 1/8 inch thickness. I use my mandolin. You can opt to peel the apples or leave them unpeeled, but make sure to wash them either way!

Combine apples and margarine in a saucepan on medium-low heat. Toss until margarine is melted, then add the rest of the ingredients (for run, consider adding a few dashes of Pumpkin Pie Spice). Stir until tender (about 10 minutes). Remove from heat and let sit 5-10 minutes.

Roll out dough and cut using a biscuit cutters, open lid of cup, knife, whatever you have. Place about ¼ cup of apple mixture in center of your dough cut-outs. Place second piece of dough on top, and pinch sides down with a fork.

Optional toppings: Melted margarine, cinnamon, sugar.

Bake at 350 for 20 minutes, until corners start to golden.

Eat. Eat all the pockets of nom.
