Quickie Acorn Squash Bake

I'm a squash-a-holic, but I loathe the idea of dumping sugar and marshmallows on such a healthful food item!

Stop. Just stop it!

Embrace the beauty of squash for its goodness.

This savory recipe will woo you to step away from the brown sugar.

 

What's so great in this winter squash?

-Vitamin C and Bs are through the roof, as will be your immune system

-Potassium means staving off cramps without having to suffer through bananas, because they are evil.

-Magnesium for recovery and anti-inflammation

-Manganese for bone strengthening, PMS, and diabetes

 

 

(Sidenote, WOMEN, we tend to struggle to get manganese. It's common in whole grains but

apparently we like grains superduper processed or not at all. Freakin eat a piece of whole grain toast for your future bone health, would ya? Or, HEY! Eat acorn squash!)

Let's bake!

 

Super complicated and difficult Acorn Squash Bake

  • 1 Acorn Squash, cut in ¼ - ½ inch slices with seeds removed

  • Olive oil for drizzling

  • 1 cup mushrooms sliced

  • 2 cloves garlic minced (or 1 tsp powder)

  • ½ tsp thyme

  • ½ tsp oregano

  • ½ tsp rosemary (freshly chopped is ideal)

  • 2 T “Parmesan”

  • Salt and pepper to taste

“Parmesan” can be bought in stores by “GoVeggie” but I have a bit of a personal issue with this company and prefer to make my own.

To make your own, throw almonds and nutritional yeast in a food processor and let it grind down to your liking. It’s really that simple. It’s fantastic on popcorn, or, uh, anything. Add garlic salt to it to mix things up or pepper if you’re feeling spicy!

 

Instructions:

Preheat oven to 350

Lay the acorn squash slices down in ungreased baking dish. Drizzle with olive oil and sprinkle the mushrooms around to your pleasing.

Sprinkle the rest of the stuff all over that sucker. Drizzle with olive oil again (if you used dried rosemary, this will be crucial as it’ll soak up a lot of the oil.)

Chuck in the oven and let it bake for 45 minutes or so.

Eat it, and be pleased with yourself for the effort you put forth for such a healthful dish.
